When I was a young and not feeling well, my mom would always make me Campbell’s cream of tomato soup and a grilled cheese sandwich. Now that I am mom, when my daughters, Ransom, Ruth Love and Camellia, are not feeling well I too make them cream of tomato soup and a grilled cheese but with a healthy twist. (Plus, I also love this soup on a rainy day or when I just want to curl up on the sofa with something yummy.)

The beauty of soup is you can make a big batch and freeze it so that it’s on hand when you need it. Also, I love the fact that the cook time for this recipe is under five minutes.

Raw Vegan Cream of Tomato Soup

Ingredients:

  • 1 cup cashews
  • 3 cups plain non-dairy milk
  • a variety of tomatoes (cherry, heirloom, etc.)
  • 1 bunch fresh dill (washed)
  • 3-4 garlic gloves
  • salt and pepper to taste

Directions:

  • Combine all the ingredients in a blender or food processor.
  • Blend until smooth.

Note: For the grilled cheese sandwich, I use Schar gluten-free bread and vegan cheddar cheese.

Female IQ Recipe Series #1: Paleo Tortillas

Let’s begin this post (and subsequent posts for the following few weeks) with a disclaimer: I’m not a chef. Nor a cook. Nor a baker.

Far from.

But, with a certification in holistic nutrition from IIN, I do know that by eating whole foods and being purposeful about what we put into our bodies we can consume more than just food — we can devour health from the inside out.

For this reason, over the next few weeks, Female IQ will share a series of easy, wellness-oriented recipes that you (and really anyone) can do. These recipes are to be made in bulk on what Female IQ calls “Q” days.

What are “Q” days?

“Q” days are set days that you put aside to do the things that matter most to achieving your optimal health. This can include meal prep days, inputting your weekly workout schedule into your calendar, or setting a bedtime routine with a smart device (EX: the Sleep app on Apple watch) — just to name a few options.

My “Q” days are Sundays and Wednesdays. And a mainstay meal prep is Female IQ’s first recipe from this series:

Egg + Sprouts = Tortillas

Ingredients:

  • 6 eggs
  • Sprouts (any variety)
  • Coconut oil
  • Seasoning (salt, pepper, garlic, turmeric, herbs, etc.)

Directions:

  1. Bring small sized pan to medium heat with coconut oil.
  2. In a bowl, add seasoning to eggs and whisk.
  3. Combine sprouts to seasoned egg mixture.
  4. Ladle seasoned egg/sprout mixture into pan and cook 1-2 minutes each side.
  5. Let cool.
  6. Use to make tacos, roll-ups or any of your other favorite tortilla recipes.
